Total time 40mins max
Set up
Fill two saucepans with water and put on a high heat and have a dry pan ready to go
Turn oven to 180 degrees
Prep
- Diced chicken thigh
- Roughly chop zucchini and broccoli
- Pick basil leaves
- Pick spinach leaves
- Lay Pine nuts on a tray
Cook
- Put pasta in boiling water
- Place pine nuts in oven
- Put zucchini, broccoli in to steam and at last minute, add spinach
- Put basil and parmesan cheese in a blender
- Fry off chicken until lightly browned
To finish
- Drain pasta and set aside, keeping a little water
- Set aside chicken
- Add Pine nuts, parmesan, steamed veg, basil to the basil and blend
- Combine everything, finish with a sprinkle of parmesan and serve. Add some pasta water if dry
